The aim of this work is to study on high hydrostatic pressure induced a micro-meso-macro-based changes of starch granule in different dispersing agents including mixed dispersing agents, acid hydrolysis agents, chemical reaction agents and enzyme reaction agents. Then establish micro-meso-macro-based theoretical system. Three kinds of starches with different crystal type and granule shape are chosen as maize starch (polyhedron), potato starch (spheroid) and tapioca starch (segment). It is investigated the effect of treated pressure, dispersing agents, pH value, processing time and temperature on the properties of the granules. Diffential scanning calorimetry, X-ray diffraction and the nuclear magnetic resonance spectroscopy are used to analyze the micro-based structure and enthalpy changes of the starch granules. Discrete numerical modeling software PFC is applied to simulate the changes of granular structure and movement. Combined with optical microscopy, scanning electron microscopy, holographic image interferometer, the micromechanical model is established. In addition, the macro-based properties are studied in different dispersing agents as well. Finally, the interrelationship among micro-based molecular structure changes, meso-based granular structure changes and micro-based properties changes are discussed, which afford people the theoretical guidance and data support for production and application.
对混合分散体系、酸水解体系、化学反应体系及酶反应体系下高静压协同作用导致的淀粉颗粒微观结构、细观力学及宏观性质变化进行系统研究,建立高静压淀粉微观-细观-宏观多尺度关联性理论体系。选择不同类型、不同形状的三种代表性淀粉为研究对象,即A型玉米淀粉(多角体),B型马铃薯淀粉(椭球体)及C型木薯淀粉(球缺体)进行高静压处理,系统分析不同处理压力、体系酸度、作用时间及作用温度对淀粉颗粒性质的影响。采用差示扫描量热仪、X-衍射仪、核磁共振仪等仪器,分析高静压淀粉的微观结构变化及其焓变;利用离散元素法建模软件模拟淀粉颗粒的细观力学变化及运动规律;结合光学显微镜、扫描电镜、应力全息图像干涉仪等设备,建立淀粉颗粒的细观力学模型。研究不同分散体系作用下淀粉的宏观性质;探讨淀粉微观分子结构变化、细观颗粒力学变化及其宏观性质变化的内在规律和关联性;为高静压改性淀粉产品的开发及应用提供理论指导及数据支撑。
