Until now, microcapsule technology is one of the versatile and booming technologies. Microencapsulation is carried out using natural food additives and well membranous auxiliary of food processing as core materials and wall materials, respectively. In the process of microcapsule production, it is one hot area of microcapsule research to improve the properties of wall materials of microcapsule. In this project, an innovative method of microcapsule technology is proposed, which is that the common wall materials containing modified nano-SiOX and oil-soluable core materials are used for the production of microcapsule. Modification mechanism and nature regulatory mechanism of wall materials affected by nano-SiOX is achieved by physical and chemical, thermodynamic, mechanical properties. Through the study of the properties of the emulsion and microcapsule, the relationship between the characteristics of microcapsules and nano-SiOX was analyzed, and the best coupling strategy of microcapsule prepared by modified nano-SiOX wall material was elucidated. The effect rules of microcapsule by modified nano-SiOX on the quality was studied by studying the characteristics of capsules during storage period. Through this study, it is expected to improve the quality of microcapsule products and promote the development of microcapsule technology.
微胶囊技术是当今用途广泛而又发展迅速的一门技术。通常以天然食品添加剂为芯材,采用成膜性好的食品加工助剂为壁材进行微囊化。在微胶囊生产过程中,微胶囊壁材性能提升一直是微胶囊研究的热点。本研究创新性的提出了将改性活化后的纳米Si0X添加到常用微胶囊壁材中,以油溶性材料为芯材,制备微胶囊。通过对纳米SiOX改性后壁材膜的物理化学性质分析以及热力学、力学等特征分析,揭示纳米SiOX对壁材的改性机理和壁材性质调控机制;通过对乳状液及微胶囊特性研究,分析微胶囊特征与纳米SiOX的相关性,阐明纳米SiOX改性壁材制备微胶囊最佳耦合策略;通过对贮藏期胶囊特性研究,获得纳米SiOX改性微胶囊产品品质影响规律。通过本研究,预期将提高微胶囊产品质量,为微胶囊技术的发展起到促进作用。
微胶囊技术是当今用途广泛而又发展迅速的一门技术。通常以天然食品添加剂为芯材,采用成膜性好的食品加工助剂为壁材进行微囊化。在微胶囊生产过程中,微胶囊壁材性能提升一直是微胶囊研究的热点。本研究创新性的提出了将改性活化后的纳米Si02添加到常用微胶囊壁材中,以活性物质、油脂等为芯材,制备微胶囊。基于此开展相关的研究,取得很好的研究成果。(1)利用改性纳米SiO2对4种大分子材料(大豆分离蛋白、明胶、阿拉伯胶、壳聚糖)进行修饰制备复合乳液。结果表明,蛋白类与多糖类都能与纳米SiO2间产生增效效应,提高乳液稳定性。(2)不同纳米SiO2添加量与大豆分离蛋白、阿拉伯胶制备复合膜研究。纳米SiO2的加入提高了复合膜的结构致密性,提高了复合膜的机械性能,增强了复合膜的热稳定性,降低了透水透气性,为微胶囊壁材的研究提供了理论基础。(3)微胶囊性质及贮藏性研究。微胶囊壁材中添加纳米SiO2增强了微胶囊的的热稳定性,提高了茶油、核桃油、黄酮、花色苷等芯材的稳定性。研究结果表明纳米SiO2强化了壁材的阻隔性能,提升了微胶囊的稳定性和货架期。综上,本项目研究了纳米SiO2对复合乳液、复合膜、微胶囊的性质影响,解释了纳米SiO2改性微胶囊壁材,提升微胶囊性能的中各环节的机理,为纳米SiO2在微胶囊中的应用提供了参考。
